Vegan Sazon Baked Potatoes

Today we made a super easy recipe that uses minimal ingredients and minimal work! We made Vegan Baked Sazon Potatoes. They turned out so good we think you are going to love them! They make a great side dish or you can do what we did and eat them all by themselves. 

For this recipe, you will only need four ingredients: Baby Potatoes, Olive Oil, Sazon, and your favorite herbs. That is it! Ugh, it is so good. These simple mixture of ingredients create a yummy garlicky, earthy, yet smoky taste somehow that makes my mouth water just thinking about.

SO, to get started let’s collect our ingredients.

 

 

The main spice for this recipe is Sazon. Sazon is a magical vegetarian seasoning that is literally great in everything. It is a delicious blend of spices including ground annatto, garlic, cumin, and coriander. You can make your own from scratch or go with a prepackaged one. We chose to use the one from Goya. I love to add flavor to season dull foods, it is great on proteins (tofu tacos anyone?) and Arlene adores using it as a soup base.

The second spice we chose to use was a garlic herb blend. It is salt-free and we thought it would compliment the Sazon well.  You can use any spice blend but we highly recommend making this step be salt-free. You can use dried or fresh herbs at this part of the recipe. 

To make these potatoes it is super simple. I am a huge fan of recipes that you can put in an oven or slow cooker and just let do their thing.  Minimal prep and easy cooking are super ideal.

To make this recipe first, preheat your oven to 425 degrees. Wash your potatoes and pat them dry. The oil will supply enough moisture. Once your baby potatoes are patted dry, place them in a bowl and drizzle with Olive oil. I used about 2 tablespoons. Honestly, use your instinct. Add a tablespoon at a time and add little more at a time until the potatoes are completely coated. Toss them around in the bowl with your hands making sure the oil is evenly distributed.

For seasoning the potatoes, we are going to use the same technique as we did with the oil. Make sure you coat the potatoes slowly. We want them to be coated but you should still be able to see the potatoes.  I ended up using an entire packet of Sazon. After you are finished with the Sazon lay the potatoes on to a cookie sheet. (Don’t worry I didn’t forget about the other seasoning blend). There was so much oil on the potatoes, I didn’t feel like I needed to add any additional non-stick spray. Once the potatoes are spread out on the pan take the additional seasoning and lightly sprinkle on top. You do not need to use a ton of it like we did with the Sazon. Also, try to avoid any extra salt. Use a herb seasoning that has no salt because the Sazon is enough. 

Bake for apx. 35 minutes or until the potatoes are crispy on the outside and soft on the inside. To check if they are done stick it with a fork. If the fork goes in very easily they are finished.

Let them cool and enjoy!

Vegan Sazon Baked Potatoes

Ingredients

  • 1/2 bag of baby potatoes
  • 2 tablespoon olive oil
  • 1 1/2 teaspoons sazon (or 1 pack)
  • garlic & herb blend to taste

Instructions

  • Preheat the oven to 425 degrees
  • Rinse potatoes & pat dry
  • Put potatoes in a bowl and coat with olive oil. Do one tablespoon at a time. We want it to be coated with oil so feel free to add less or more.
  • Slowly add the Sazon seasoning. Again, the potatoes should be coated. Add more or less depending
  • Place potatoes on an ungreased cookie sheet
  • Sprinkle (salt-free) garlic and herbs. You can use dried or fresh herbs. (choose your favorite herbs)
  • Bake for 35 minutes or until the potatoes are crispy on the outside and soft on the inside. Use a fork to test. If it goes in easily they are done.
