I love chickpeas. You can do soooo much with them. The other day I decided to make a nourish bowl and I wanted something different from what I usually like to use. Since chickpeas are a staple in my kitchen cupboard I instantly thought- Roasted Chickpeas.
They are super easy to make and you can spice them up however you like. The magic about these things is that you can put them in salads, on nourish bowls, or eat them in your hand for a snack. So good.
For this recipe, you need 1 12 oz can of chickpeas/ garbanzo beans (they are the same thing). Olive oil and your favorite spices. That is it! These things are so simple yet so delicious.
First, preheat your oven to 450 degrees. Open your can of beans and rinse them off. Some people say to completely let them dry but mine are fine patted dry with a paper towel. Next, place your beans in a bowl and drizzle your olive oil all over. I like to really make sure the chickpeas are coated. Now it is time for your spices. There are 2 ways you can apply your spices. Method one it so spread your chickpeas on a baking sheet and sprinkle the spice on. OR the way I like to do it, spice up your garbanzo beans while in the bowl after tossing with olive oil. I like to make sure every chickpea has flavor!
Once they are seasoned the way you like, spread your chickpeas on a baking sheet. Put them in your preheated oven. Let them bake for 30 to 40 minutes. Keep an eye on your chickpeas to be sure they do not burn. Some people like crispy chickpeas and some like them crunchy on the outside and a little soft on the inside. Cook them to how you enjoy. Longer cooking times equal a crunchier snack.
