Vegan Recipe: Easy Green Sushi

I am in love with this recipe. It is a super easy sushi-inspired veggie roll. I used to be so intimidated by sushi. I thought it would be very hard to make. Then, one day I decided to take a leap and I just adore the way these turned out. For this recipe, you do not need any fancy rice cookers (though if you have one totally use it). You don’t need any fancy rice vinegar (again unless you want to use them).The ingredients that we will be using you should have no problem finding at your local grocery store.

The first step is obvious. Gather your ingredients. You can find the ingredient measurements below. You will need cucumber, spinach, green onions, avocado, instant microwaveable rice (yes- I said instant microwaveable rice), nori and soy sauce for dipping.

Once you have obtained all of your ingredients we want to cook the rice. Cook the rice per the instructions on the box. The rice should be moist but there should not be a lot of excess water when you stir it. If there looks like there is o much water, you are going to need to microwave it another minute. If it looks too dry, add a splash of water and microwave again. I find that it takes about six minutes to cook.

Pro Tip: I like to season the rice. Sometimes I will add a teaspoon of regular vinegar (or rice vinegar), sugar and salt to taste. The sugar helps offset the vinegar. The salt helps even out the sweetness. Occasionally I will also add additional herbs and/ or spice to kick it up a notch. Red pepper anyone? Remember not to add too much salt though because the soy sauce will be salty enough!

Put your rice in the fridge to cool down while you cut up your veggies.

When you are finished with your veggies it is time to start building your rolls. For this step, you can use a bamboo rolling mat. We covered ours in plastic wrap. Or you can use a clean, heavy kitchen towel. I would also put a piece of plastic wrap on top of the towel where you plan on laying your nori.

Lay your nori on the mat and coat it with rice. I like to use a thin coating because when you roll it the roll will get thick. So, do what your preference it. Once you make the first roll you will be able to judge the amount of rice you would like best for the second roll.

Add the veggies about ¼ of the way. Then gently lift up the end closest to the vegetable and start to roll the nori slowly. Use the mat to help you.

Once the nori is rolled you can cut the sushi into however large pieces you would like. When you eat it, use soy sauce as a dipping sauce. It also might be fun to experiment with different sauces. I tried it with sriracha and it was divine!

Easy Green Vegan Sushi

Ingredients

1/2 cucumber

2 green onions

1 avocado

1/2 cup spinach

1 cup instant rice

1 cup water (for the instant rice)

Nori seaweed sheets

Soy Sauce to taste

Instructions

  1. As per the box, make your rice. Combine the water and the rice and microwave for about 5 to 6 minutes. If the rice looks watery, microwave again for another minute. If the rice appears too dry, add a splash of water and microwave for a minute. Place the rice in the fridge to cool while you prep the veggies. Optional: Season the rice by adding a teaspoon of regular vinegar (or rice vinegar), sugar and salt to taste.  Occasionally I will also add additional herbs and/ or spice to kick it up a notch.  Remember not to add too much salt though because the soy sauce will be salty enough!
  2. Slice your vegetables. We want to make long and thin slices.
  3. Remove the rice from the fridge and prep your rolling station. Use a bamboo rolling mat or a clean kitchen towel.
  4. Lay your nori sheet on your mat and coat it with rice. I like to use a thin coat but you can add as much rice as you would like. When you roll your sushi the rice will get thicker.  So , to avoid rolls that are all rice I recommend using a thin layer. After you make your first roll you can adjust the thickness to your preference.
  5. Place your vegetables about 1/4 the way on the roll. Keep them all together. Do not spread them out on the sheet.
  6. Roll your sushi by starting at the side closest to the veggies. Slowly roll it and use your mat or towel to help.
  7. Slice your roll to desired thickness.
  8. Dip in soy sauce and enjoy!
